Strawberry Balsamic Vinaigrette

Ingredients
1C- chopped fresh strawberries
2ea- Garlic Cloves
1C- Olive Oil
1TBS- Dijon Mustard
2TBS- Brown Sugar
1tsp- Kosher Salt
Method
- Starting with the strawberries, add all ingredients except the oil. Slowly add oil to emulsify once the mixture smooths out in the blender or food processor. The dressing is complete once the oil is mixed thoroughly with the other ingredients. Store in a squeeze bottle or Tupperware.
- Arugula, or spring mix with sliced strawberries, crumbled feta cheese, honey-roasted peanuts, and red onion, all tossed with strawberry balsamic vinaigrette.
4-5C- Arugula
1C -Sliced strawberries
½ C- Crushed honey-roasted peanuts
¼ C- Thinly sliced red onion
¼ C- Crumbled feta cheese
½ tsp- Salt, ½ tsp Pepper
