Holiday Citrus Vinaigrette

Ingredients

  • ¼ C-  fresh lemon juice  

  • ¼ C- Fresh orange juice 

  • ¼ C – red wine vinegar 

  • 2 Tbs- brown sugar 

  • 1 Tbs- honey 

  • 2 Tbs- Dijon mustard 

  • ½ C- Olive oil 

  • Salt to taste

  • Tools
  • Measuring utensils  

  • Blender or food processor 

Method

  • Combine all ingredients except the olive oil and pulse together in blender.
  • At this point in making dressings, I like to taste for sugar and acid, it shouldn't be offensive on its own.
  • Once satisfied, increase the blender speed and slowly drizzle in the olive oil. This method produces a smooth dressing that will not break.
  • The Dijon is the emulsifier. Once the dressing starts to smooth out tase again and season with kosher salt.
  • Transfer to vessel or salad and enjoy!
