Holiday Citrus Vinaigrette

¼ C- fresh lemon juice
¼ C- Fresh orange juice
¼ C – red wine vinegar
2 Tbs- brown sugar
1 Tbs- honey
2 Tbs- Dijon mustard
½ C- Olive oil
Salt to taste
- Tools

Blender or food processor
Method
- Combine all ingredients except the olive oil and pulse together in blender.
- At this point in making dressings, I like to taste for sugar and acid, it shouldn't be offensive on its own.
- Once satisfied, increase the blender speed and slowly drizzle in the olive oil. This method produces a smooth dressing that will not break.
- The Dijon is the emulsifier. Once the dressing starts to smooth out tase again and season with kosher salt.
- Transfer to vessel or salad and enjoy!
