Christmas Kale Salad

Ingredients

  • 8 C- chopped kale 

  • 2 C- mandarin oranges 

  • ½ C- walnuts or pecans chopped 

  • ½ C- julienned red onion  

  • ½ C- blue cheese crumbles 

  • ½ C- Sweety Drop Peppers  

  • 1 C- Citrus Vinaigrette (recipe included) 

  • ½ C- Fresh Citrus juice- 1 orange, 1lime, 1 lemon

  • Tools
  • Stainless steel bowl 

  • Knife 

  • Cutting board

  • Measuring utensils 

Method

  • In a stainless-steel mixing bowl massage, the chopped kale with the citrus juice and a pinch of salt.
  • Allow kale to marinade for 10- 15 minutes.
  • After marinading and massaging, drain the extra citrus from the bowl and add the rest of the ingredients.
  • Toss and mix thoroughly. Enjoy!
