Pasta Con La Sarde, Pasta with sardines

Ingredients

  • 1 tin of sardines. If lightly smoked are available go for it.  

  • ¼ C – minced garlic

  • ¼ C – Finely chopped white onion 

  • 2 T- Minced Calabrian chiles

  • ¼ C- fine julienned shallots 

  • 1 Lb- dry pasta- anything in the spaghetti family works for this. 

  • 2 C- Breadcrumbs. Day old bread, baguettes are great, large rustic chunks.  

  • ¼ Lb- unsalted butter 

  • 1- lemon 

  • ¼ C- chopped basil and parsley 

  • Tools
  • Sharp knife  

  • Cutting board 

  • Stock pot 

  • Large sauté pans

Method

  • Salt and boil pasta water, cook pasta al dente and set aside.
  • In a large sauté pan heat ½ C EVOO and toast ¼ C minced garlic and remove from oil, repeat this process with the shallots frying them until crispy and setting aside. You may need to add a little olive oil after frying the garlic and shallots, do so if necessary and reduce heat.
  • Drain all liquid from the sardines, give them a rinse pat dry, chop them into palatable pieces and add them to the pan. Add chiles, and onion to pan along with the butter and cook until onions are translucent, add a big squeeze of that lemon and half of the fresh herbs.
  • Once saucy, add in the partially cooked pasta and bring back up to temperature. Toss everything, thoroughly. 
  • In a mixing bowl, combine breadcrumbs, zest and juice from the lemon, the crispy garlic and shallots and the rest of the fresh herbs. dress everything with a little EVOO, salt and pepper.  
  • Plate pasta with a generous portion of the bread crumb mix a slice of lemon and enjoy.
