Red Curry Cauliflower

Ingredients

  • 1-2 heads cauliflower 

  • ¼ -½ C- red curry paste 

  • ½ C- EVOO or avocado oil 

  • S+P 

  • Tools
  • Gloves 

  • Sharp knife 

  • Cutting board 

  • Baking sheet 

  • Whisk 

  • Mixing bowl

  • Measuring utensils 

Method

  • Whisk together the curry paste and oil, break cauliflower into bite size florets.
  • Wearing gloves, mix and coat the cauliflower completely in the oil curry paste mixture.
  • Preheat oven to 400, spread cauliflower out across sheet tray (parchment recommended) and bake for 14-20 minutes depending on your oven and how crispy you would like them.
  • Season with salt and pepper and serve. Pairs well with avocado, works as a taco, or a side dish. Very versatile. Enjoy!
