Ingredients
1 Lb- guava peeled and rinsed
1ea- orange, juiced
1ea- lemon, juiced
3C-water
1C- dark brown sugar
2tsp- salt

Method
- Peel guava and cut into small cubes. Add the fruit, citrus juice, salt and sugar to a cold saucepan. Slowly bring all the ingredients to a boil. When cooking stove-top with sugars, low and slow is the key. Once brought to a boil reduce to simmer and cook until a consistent texture results. Remove from heat allow to cool down to room temp and blend either with an immersion or counter- top blender. Transfer to a container of your choice and refrigerate.
This is a great starting point. Essentially, you have made a compote, and that compote can be the base for many things. Including, but not limited to: BBQ sauce, hot sauce, a tropical glaze, or just put it on toast. As always, your kitchen, your rules. Have fun with it!
