Dungeness Crab (Roll)

1 oz fresh tarragon
8 oz- fresh crab (per sandwich)
½ lb- good butter, unsalted
¼ C- capers
1C- mayonnaise
¼ C- old bay
1T – hot sauce tobacco is great for this
2 T- fresh cracked black pepper
¼ C- lemon juice
4- demi baguette, or one full size if you want to cut it.
3 C- arugula
Sea salt to taste

Method
- Sweat tarragon in a bit of water with salt to bloom the flavor.
- Combine mayo, lemon, tarragon and black pepper and chill.
- In a large stock pot, poach crab for about 7-8 minutes, remove, chill and de-shell.
- In a small sauce pot, begin melting butter with a bit of fresh tarragon.
- Slice and toast baguette with a bit of olive oil.
- Once the tarragon is melted add in crab meat, basting while heating.
- In a small bowl, toss arugula with a bit of lemon and olive oil.
- Dress baguette with tarragon mayo assemble the sandwich.
- Very Important: watch intently as your dinner guest lights up with joy.
