Ingredients
4lb- Julienned red onion, use multiple types if you have them.
½ C- Brown sugar
½ C- kosher salt
3T oz whole coriander
3 T- whole mustard seed
3ea- Bay Leaf
3C- Red Wine Vinegar
3Cl, oz- Apple Cider Vinegar
6C, oz- Water
Method
- Combine all ingredients in a large sauce pot. Bring to boil, reduce to simmer and keep on heat until all salt and sugar are dissolved—chill, label and date.
