Summer Rice.

Ingredients

  • Olive oil 

  • 1Tbs butter 

  • 2 C- wild rice 

  • 2 Tbs- chicken bouillon or two cubes 

  • ½ C- onion  

  • 3 Tbs- minced garlic 

  • 1 ½ C- chopped cremini  

  • 1 tsp - dry oregano 

  • 1 tsp- dry basil 

  • ¼ C- fresh herbs, mix it up! Basil, Chive, Parsley, Chervil.  

  • Tools
  • Rice cooker or sauce pot

  • measuring utensils

  • sharp knife

  • cutting board

  • large sauté pan

  • spoon

Method

  • In the rice cooker or sauce pot cook off the wild rice.
  • In the large sate pan, begin cooking the rest of the vegetables, starting with the mushrooms.
  • When the mushrooms have reduced in volume by half, add the onions garlic and dry herbs lightly caramelize, blooming the herbs as you go.
  • Once the rice is almost cooked, transfer it to the sauté pan and mix everything together. If needed add a touch of water and the butter.
  • Simmer until rice is tender and enjoy with most any protein, in this case, pike.
