Ingredients
1ea- red cabbage (2 if they’re small)
2ea- red onion
1C- beet braising liquid
½ C- apple cider vinegar
1C- dark brown sugar
Salt and Pepper
- Tools
Sharp knife, or mandolin
Cutting board
Measuring utensils
Aluminum foil
4” deep roasting pan
Method
- Divide the cabbage into four pieces, removing the stem. With the mandolin or knife shave the cabbage thinly. Shave the red onion equally as thin.
- In the roasting pan combine all but the wet ingredients. Season the cabbage and onion with salt and pepper.
- Gently massage the cabbage onion mixture until the brown sugar starts to melt a bit and some liquid is drawn from the cabbage.
- Add in the braising liquid and place in the oven at 375 degrees for about 30 minutes. Once finished you may put it back in the oven uncovered for about 5 minutes remove, season mix and serve.
