Bacon wrapped dates, with brie.

Ingredients

  • 20 ea.- dates 

  • 1 ea.- wheel of brie (smallish) 

  • 1lb thick cut applewood or hickory smoked bacon 

  • 1 C- Dark brown sugar 

  • ¼ C- FRESH cracked black pepper 

  • Tools
  • Sharp knife

  • Cutting board 

  • Baking sheet

  • Toothpicks

Method

  • Peel back rind on the brie allow to warm up a bit. Slice all the dates in half but not all the way through. Like a hotdog bun.
  • Stuff each date with brie and squeeze shut set on a sheet and place in the freezer for a moment.
  • Coat all the bacon in brown sugar and black pepper and cut in half.
  • Wrap Cheese filled date in the coated bacon and pick to seal. Bake at 350 spinning the tray every 8 minutes until they are done.   
  • There are plenty of recipes for these, but I haven't found any that take the time to candy their bacon or use brie.  Enjoy!
