Braised Red Cabbage

Braised Red Cabbage

Ingredients

  • 1ea- red cabbage (2 if they’re small) 

  • 2ea- red onion 

  • 1C- beet braising liquid 

  • ½ C- apple cider vinegar 

  • 1C- dark brown sugar 

  • Salt and Pepper  

  • Tools
  • Sharp knife, or mandolin

  • Cutting board

  • Measuring utensils 

  • Aluminum foil 

  • 4” deep roasting pan 

Method

  • Divide the cabbage into four pieces, removing the stem. With the mandolin or knife shave the cabbage thinly. Shave the red onion equally as thin.
  • In the roasting pan combine all but the wet ingredients. Season the cabbage and onion with salt and pepper.
  • Gently massage the cabbage onion mixture until the brown sugar starts to melt a bit and some liquid is drawn from the cabbage.
  • Add in the braising liquid and place in the oven at 375 degrees for about 30 minutes. Once finished you may put it back in the oven uncovered for about 5 minutes remove, season mix and serve.
