Broiled Whitefish

2ea- sides fresh whitefish filet deboned
2- bunches parsley
1-red onion- super fine dice
4 TBS- sumac
Juice- of two lemons
¼ C- EVOO
- Tools
Cutting board
Knife
Mixing bowl
Baking Sheet
Method
- Chop parsley, onions and sumac together and dress with lemon juice and EVOO. Allow to sit cold for the cook time of the fish.
- Place both sides of fish on a baking tray, season with salt pepper and brush with some EVOO or butter.
- Broil on high for about 6 minutes. The flesh of the fish should tighten slightly, and the skin will remain on the tray.
- Plate your fish and top with the parsley and sumac salad.
