Ingredients

  • Skate Wing- 1 wing per guest

  • Wheat germ- buy a bag, use what you need 

  • 1 lb- butter 

  • Salt and pepper 

  • Tools
  • large skillet

  • small saucepot

  • measuring utensils

  • Small baking sheet

Method

  • Ensure that all silver skin and connective tissue have been trimmed and removed. Season both sides of the flesh and dredge in the wheat germ, and set aside.
  • In a saucepan, bring one pound of unsalted butter to a lite simmer and cook until brown in smell, not color and not a second longer.
  • Remove from heat and transfer to the warm skillet. Increase heat until butter is again fragrant, and gently lay the skate wing into the hot butter, always away from you. The skate will start to curl when it's time to flip.
  • The breading should be golden like a nice piece of wheat toast. On a round plate lay the skate on one side and ladle some additional brown butter, a crack of sea salt and pepper. On the other side of the plate, the cauliflower salad. A nice touch would be a mix of fresh herbs over the plate, maybe a lemon slice. Bon Appetite.
