Charred Cauliflower, Arugula Salad.

Ingredients

  • ½ head of cauliflower

  • ¼ C- capers, drained and rinsed. 

  • ¼ C- lemon juice

  • ½ C- olive oil 

  • 4 C- arugula 

  • Sea salt 

  • Fresh cracked pepper 

  • Tools
  • Cutting board

  • Sharp knife

  • Measuring utensils

  • Mixing bowl

Method

  • On the grill or over a burner on a gas range, thoroughly and evenly char the cauliflower. Remove from heat and allow to cool enough to handle it, If you have a mandolin, feel free to use it if not, with a sharp knife, slice the cauliflower extra thin from base to flower.
  • Add cauliflower, cappers, and lemon juice to the mixing bowl and toss.
  • Allow these ingredients to marinate for a moment, season, and taste. Add the arugula and finish tossing, adding olive oil as needed. Serve with skate wing.
