Yellow Perch

Medium saute pan
Mixing bowl x2
Knife
Cutting board
Spatula or tongs
Paper towel
Ingredients
2C-Finely, ground bread crumbs, your choice on the crumbs, you could utilize bread you have and make them or buy them.
4C- Milk
1tbs- Old Bay
½ C- finely chopped parsley
¼ C- grated Parmesan cheese
¼ oil
1- Lemon- cut into wedges
- Remoulade
½ C- mayonnaise
½ C - chili sauce
1 T - Dijon mustard
⅛ C- fresh lemon juice
2 T -chopped capers
1tbs- Old Bay
1T Worcestershire sauce
¼ t Tabasco, or whatever hot sauce you prefer.
Method
- Yellow Perch
- Combine old bay and milk and add perch filets, let sit for a few minutes.
- Combine half of your chopped parsley, the parm, and the bread crumbs, mix thoroughly.
- Remove perch filets from milk shaking off the excess liquid and toss them in the bread crumb mix until completely coated.
- In a medium sauté pan heat oil to 300-325F. Sauté perch in oil until golden and crispy, remove the fish and rest on a paper towel or plate, season with a pinch of salt.
- Garnish your perch with the remaining parsley and enjoy with remoulade and a squeeze of lemon.
- Remoulade:
- Combine all ingredients in a mixing bowl, whisk together and chill in the refrigerator. Enjoy!
