Fire Grilled Whitefish

Fire Grilled Whitefish

Ingredients

  • 1-2 sides of fish, (boned) 

  • 1/2lb- butter 

  • 3 Tbs- old bay 

  • 3 Tbs -Minced Garlic 

  • 3 Tbs- lemon juice

  • 3 Tbs- fresh parsley

  • 1 ea- Roasted red pepper. (can or jar totally fine) 

  • Tools
  • Food processor 

  • Measuring utensils

  • Cutting board

  • Micro plane/ zester

  • BBQ Grill 

Method

  • If using a propane grill, light and set to high. If using a charcoal grill, start fire, spread coals and add a bit of hardwood like apple or hickory.
  • In the food processor add all ingredients except the fish. Pulse until thoroughly combined, remove and place near grill to melt.
  • Salt and pepper the fish on both sides with the skin on.
  • Once grill is preheated to 450-500 oil grate and fish skin side up, cook for 2 ½ minutes and quarter turn to create the diamond pattern sear.
  • After the quarter turn allow the fish to cook for another 2-3 minutes and flip, flesh side up. Once flesh side up baste fish with the compound butter continuously until flesh has separated from the skin.
  • Remove from the grill leaving the skin behind. Serve with lemon and more compound butter. Enjoy.
