Grilled Trout with Sage Butter

2-3 lbs. trout- fresh, skin on, deboned.
1oz- fresh sage
¼ lbs.- butter
Kosher salt
- Tools

Method
- In a small sauté pan, gently toast the fresh sage leaves in butter. Allow it to become fragrant. Preheat your grill to 400.
- Once hot season your trout with kosher salt and lightly oil, grill flesh side down be patient, and allow the grill to release the fish before rotating it.
- Finish on the skin side allowing to become crispy, gently brush with the sage butter and allow to rest for 5 minutes before serving.
- Serve with Braised Leeks and Apple Pecan Chutney.
