Micro Greens 

Lets talk micros, there are a plethora of ways to utilize these lovely greens, tendrils and sprouts. Mirco greens are generally just a small version of some of your favorite fresh herbs. This is a great way to really take your plating up a notch. Some examples: tacos garnished with micro cilantro, bruschetta with micro basil, or some beautiful micro bulls’ blood lightly dressed to accompany hearty protein like a steak. 

 We, in the fine dining scene love our micros, they tend to be sweeter and not as overbearing. When using any greens were going to want to dress them. Keep it simple for instance: olive oil and fresh lemon, a shot of lime for micro cilantro, or even just a little salt and pepper. Again, keep it simple and let the ingredient shine.  

For the most part micros are used as a garnish but that doesn’t mean there aren’t other applications. From rainbow mix, wasabi greens, or pea tendrils a small pallet cleansing salad could be achieved.  In your kitchen, you make the rules there are no firm guidelines. The best thing is to think freely and cook what gives you joy. That dinner your planning, pick up some micro greens and give your guest a taste of fine dining at home! Just remember to have fun with it.
