Ingredients
1ea- pineapple, skinned and cored
3 ½ lb- tomato
2ea- onion rough cut
5ea- clove garlic
½ C- brown sugar
4T- kosher salt
1ea- bunch of cilantro
¾ C- Lime juice

Method
- Leaving out the sugar salt and lime juice, spread ingredients evenly onto a cookie sheet and broil until all begin to caramelize.
- Allow the tomatoes and onions to char a bit.
- Remove from oven and allow to cool to a manageable temperature.
- Add all ingredients to food processor and pulse to a chunky consistency.
- Season with salt to tase and enjoy.
