Pumpkin Pancakes

Ingredients

  • 2C- AP flour 

  • 3tbs- brown sugar 

  • 1 ½ tsp- baking powder 

  • 1 ½ tsp- baking soda 

  • 2 ½ C- buttermilk 

  • 2- large eggs 

  • 3 tbs- melted, unsalted butter 

  • 1C- pumpkin ricotta puree  

  • Tools
  • Whisk 

  • Mixing bowl  

  • Rubber Spatula 

  • Measuring utensils 

Method

  • Sift all dry ingredients together.
  • Whisk in eggs buttermilk and puree until batter is formed then slowly whisk in the melted butter.
  • For best results start in a pan one flip, finish in 350-degree oven.
