Not Your Average Elote

5-6 Ears of corn
1C- Mayo
¼C-Ancho Chili Powder
¼C -fresh lime juice
1T- Kosher salt
½C- cotija cheese
½C- julienned onion
½C-julienned red bell pepper
- Tools
Grill(ideal) oven works.
Large sauté pan
Small mixing bowl
Whisk
Measuring spoons/ cups

Method
- Roast your corn on the grill. Once done, shuck corn, being careful to remove all fibers, and season with a little salt.
- In a mixing bowl combine mayo, lime juice, chili powder, and 1T of salt. Whisk together until all ingredients are thoroughly combined.
- Once corn is grilled/ roasted, remove all corn from the cob and set aside.
- In a sauté pan heat about 2tbs of oil and start the sauté with peppers and onions, cook until the vegetables begin to caramelize.
- Once the peppers and onions have cooked down enough reduce heat and add corn, then mayo mix and toss, do not leave on heat long or mayo will break.
- Once corn is sauced add cheese and toss.
- Serve in a dish with a lime wedge and fresh cilantro.
