Ingredients

  • 5-6 Ears of corn 

  • 1C- Mayo 

  • ¼C-Ancho Chili Powder 

  • ¼C -fresh lime juice 

  • 1T- Kosher salt 

  • ½C- cotija cheese 

  • ½C- julienned onion 

  • ½C-julienned red bell pepper

  • Tools
  • Grill(ideal) oven works. 

  • Large sauté pan 

  • Small mixing bowl 

  • Whisk 

  • Measuring spoons/ cups 

  • Knife 

  •  Cutting Board 

Method

  • Roast your corn on the grill. Once done, shuck corn, being careful to remove all fibers, and season with a little salt.
  • In a mixing bowl combine mayo, lime juice, chili powder, and 1T of salt. Whisk together until all ingredients are thoroughly combined.
  • Once corn is grilled/ roasted, remove all corn from the cob and set aside.
  • In a sauté pan heat about 2tbs of oil and start the sauté with peppers and onions, cook until the vegetables begin to caramelize.
  • Once the peppers and onions have cooked down enough reduce heat and add corn, then mayo mix and toss, do not leave on heat long or mayo will break.
  • Once corn is sauced add cheese and toss.
  • Serve in a dish with a lime wedge and fresh cilantro.
